There are only 7 Leeds certified restaurants in the entire country, Kim Barmann is doing everything to ensure that her supper club, The Red Stag, is number 8. She sees it as not just a moral move, but a good business move.
Restaurants are notoriously expensive to build, but she saved approximately 50% by using recycled materials. The marble for her bar was salvaged from a local hotel’s remodel, and her tables came from old doors. Knowing that restaurants use more energy and water then almost any other industry, Barrman invested in energy efficient heating and water units. The initial capital outlay was higher but her energy savings will cover those costs quickly.
