It’s Friday in Wine Country… and as the temperature soars to 100 degrees the grapes are just beginning to be picked.
Once upon a time the restaurant owner only had to deal with weather and the guy down the block. Now the competition for customers comes from all sides. That’s why it helps to keep a T.V. schedule handy when doing the weekly staff schedule. We can be assured that season final episodes, new episodes, special episodes and any sporting event that we are in the habit of watching will keep at least 20% of our customers at home. Combine that with the fact we often don’t pay attention to the element of broadcast and we have over shot our payroll by an astronomical number.
And just because you have a T.V. doesn’t mean you can compete with the couches of the American consumer.
But last night is last night and now the weekend is on the horizon. We have to admit no matter how good or tumultuous the week was the weekend is the saving high that we all await. Even a slow weekend night is better than a slow Tuesday or Wednesday. Customers are in better moods, they are interested in enjoying themselves more than just eating out and it is the perfect time to up sell wines, apps, salads, and desserts. Customers expect to spend more on the weekend and for the most part, they do.
Today, make sure to give the waiters a thank you and a pep talk about the months ahead. They have struggled just as we all have and they have kept a fairly good disposition through it all. A small note of appreciation goes a long way with a loyal staff. It will help them become a better tea member and will help you increase the number you bring to the bottom line.
Enjoy the weekend. Buy a few customers dessert on the house. It is a very cheap form of advertising.
