The Culinary Institute of America has introduced prochef Recipe Master. Now chefs can build their own customized recipe database, starting with more than 850 classical and contemporary recipes from the CIA's comprehensive text, Professional Chef, 7th Edition.
With this software, operators can consolidate ingredient lists to simplify food ordering, leaving more time during your visits to address some of the other issues facing your customer.
Do you have customers who change their menu weekly, or even daily? With prochef Recipe Master, they can use the weekly meal planner to see what they'll need from you for the entire week.
There are also nutritional profiles as well as temperature guides that provide general guidelines for doneness in meats, poultry and fish; sugar stages and temperatures; and the smoking points of selected fats. (In case you were curious, safflower oil's smoking point is 510° F.)
