Labor costs appear to be slowly creeping up on foo

Labor costs appear to be slowly creeping up on foodservice operators in the supermarket. After holding steady for a couple of years, labor costs associated with prepared foods have risen slightly. They now account for more than 25 percent of instore foodservice sales. Even at 25 percent they still reflect the supermarket's strong reliance on foodservice supplier prepared foods. Only about 6 percent of the supermarkets employ a trained chef, and furthermore, only 22 percent of foodservice employees in supermarkets are trained cooks of any sort.
