California Pizza Plots More Fish On Menu

California Pizza Kitchen is planning the introduction of more proteins--with an emphasis on fish--as it tries to drum up additional dinner business.

The changes will likely take place in November, when CPK usually introduces a new menu.

is known for its gourmet pies, but some of its best-selling items are not pizza, CEO Fred Hipp said. However, he told analysts yesterday that the company doesn't want to stray too far from its roots.

"We're not going to put steaks or pork chops or burgers on the menu," he said. "Everything will be in synch with the menu that we create today."

Hipp also said that CPK will roll out a call-ahead seating program in September, following a test in one of its markets.
