El Pollo Loco is trying to capitalize on two major quickservice trends--the quest for bolder flavors and an upgrade of entree-sized salads--with a pair of menu additions.

Each of the new Pollo Salads--the Chicken Caesar and the Chicken Fiesta--features fresh-from-the-grill chicken breast on a bed of hand-tossed lettuce, along with fiesta tortilla strips, Cotija cheese, pico de gallo, and specialty garnishes and dressing. The Chicken Caesar adds roasted pepitas (Mexican-style pumpkin seeds) and creamy cilantro dressing, while the Chicken Fiesta Salad tosses on cheddar and jack cheeses, roasted corn poblano, guacamole, sour cream, and chipotle dressing. Each salad is topped with a signature garnish--a serrano pepper. They're priced at $4.99 and are permanent menu additions.

"Our new salads resemble those that consumes might find at upscale dining establishments that charge twice as much," said chief marketing officer Karen Eadon.
