Compass Group, headquartered in Charlotte, is now requiring its chefs and managers to complete a nutrition-training course and pass a test to prove they've absorbed the material.
The training is in support of Compass' Balanced Choices program, a nutrition-focused program
that includes over 1,000 recipes, most of which are for dishes that are relatively lower in calories, fat and sodium. The program also has an educational component that lets foodservice customers know about the healthful choices available to them in Compass-operated dining facilities.
More than 6,000 chefs and managers will participate in the 10-hour Web-based program by the year's end, and more than 8,000 over the next two years.
At the slots: Compass Group's Canteen Vending Services introduced a line of vending machines stocked with healthful options, last summer. The contractor also reports having increased the number of better-for-you choices in traditional vending, as well.
Compass has been piloting Balanced Choices in several locations and plans to roll out the program to about 2,500 accounts by the end of the year.
