Business increases anywhere from 20 to 40 percent during the summer months at Java Ranch Espresso Bar & Cafe, Fredericksburg, Texas, according to co-owner Rick Roy. "We have a spike of 40 percent just because it's a tourist destination," he says.

Fredericksburg, located in the Texas Hill Country, was settled in the 1840s by German immigrants and today is known for its antiques shops, B&Bs and scenic setting. "It's sort of the Sante Fe of Texas," Roy says.

And, because it's summer, there's also a greater pool of job applicants as high school and college stude
