Sushi purveyors apparently undaunted by recession

Restaurateurs - particularly those offering Asian cuisine - appear to be undaunted by the struggling economy. Two new sushi eateries have opened on 600 South in downtown Salt Lake City, while a third is slated to open in early May in West Jordan.

The owner of Last Samurai, which opened its doors roughly eight months ago in Park City, launched a second location at 214 W. 600 S., Salt Lake City, the week of April 20. Master sushi chef and former Ichiban Sushi owner Peggi Whiting, in partnership with Keith Guevara, opened Hayai Zushi, a drive-through sushi and teriyaki eatery, at 307 W. 600 S. on April 8, while Sanaka Sushi Bar is slated to open the first week of May at 7626 Campus View Dr. in Jordan Landing.

Last Samurai owner Van Nguyen said his new Salt Lake City location, which has a liquor license to serve wine and beer, measures more than 5,000 square feet and can seat as many as 200 in an upscale setting. It is open Monday through Saturday from 11:30 a.m. to 2:30 p. m. for lunch and from 5 to 10 p.m. for dinner. Sunday hours are 5 to 10 p.m.
