Haute Cuisine...Fast

Leeks with crystallized chicken and spices; hamburgers garnished with trocadero lettuce and tapenade; and green beans with pâté de canard top the best seller list at NH Hoteles' latest restaurant, Fast-Good at the NH Eurobuilding hotel, Madrid. Fast-Good,

the brainchild of famed Chef Ferran Adriá, is gourmet-cum-fast-food with an average check around €15 (US$18).

"We came up with the idea of Fast-Good after analyzing the markets in different countries around the world," Adriá says. "Business customers do not have a lot of time for eating but are increasingly interested in living well and quality eating."

Fast-Good's menu combines ingredients used in traditional haute cuisine but prepared fresh—and fast. Rather than frozen French fries, guests watch cooks dice and fry potatoes in olive oil. Fresh fruit juices—including litchis, raspberry or red peaches—are prepared upon order.

Aside from its high-end ingredients, Fast-Good's ambience also lends itself to attracting business clientele. For now, NH Hoteles plans to test Fast-Good in this market for a couple of months with expansion plans throughout Spain and parts of Latin America in the next two years.
