During

the cold months of the year, there's something especially soothing about slowly sipped, steaming hot beverages. And the mind-boggling array of choices available today allow operators to enliven beverage menus with exciting new tastes, not to mention some highly-touted health benefits.

A Coffee Culture

According to the coffee cognoscenti, java is the world's most popular beverage after water, with over 400 billion cups consumed annually (coffeeuniverse.com). In this country, a recent study by Opinion Research Corporation found 60 percent of consumers drink at least one cup of coffee per day, while one in ten imbibe five or more cups a day And when it comes to the fancy stuff, the National Coffee Association reports that gourmet and espresso-based coffee drinks continue to pull in new devotees, with each category of spectalty drink posting progressively greater consumption numbers over the past three years (see chart).
