HEADNOTE

Many groups want to blame foodservice operators for this country's obesity epidemic. And that's not fair.

It has been all over the news. Every time we turn on our televisions or open a magazine, we see another report on how Americans are getting fatter. It is true, obesity is a growing problem in our country today. In a report on Excess Weight and the Obesity Epidemic published by Partnership for Prevention this past June, it was reported that obesity is on the rise - the proportion of U.S. adults classified as obese rose from an estimated 12 percent in 1991 to 18 percent in 1998. The proportion of those overweight or obese is even greater: more than half the adult population.

Last October, the Journal of the American Medical Association devoted an entire issue to the subject of obesity. That same month, the Center: for Disease Control and Prevention (CDC) declared obesity a national epidemic. This topic is so hot that it was major focus of the National Nutrition Summit in May 2001 (the first one held since 1969)
